Has anyone got a recipe for a veggie curry using curry paste?

I love the takeaway vegetable curry but it is so oily. I have got some curry paste and tinned tomatoes in my larder so can anyone suggest a quick recipe that makes a filling curry with vegetables. I am trying to cut down on meat.

    To make a veggie curry I fry some onions and mushrooms with a little oil (although I guess you can use any veg). I then add a couple of desert spoons of curry paste. Continue to heat and stir adding in a can of chopped tomatoes and a can of strained chick peas. Heat for a further 5 mins and serve with rice. Yummy! x

    If I am making veg curry using curry paste, I make up the paste into a sauce in a separate pot. I then fry of some mushroom and onions, and lightly steam some root veg while steaming my rice (broccoli is really yummy), then combine the lot, it is so easy and tasty. To make it even easier you can use frozen mixed veg.

    really easy: put about 1/2 tsp of curry paste in a frying pan (this might look like less than you’ll think you need, but trust me) and let it heat a moment. add about 3/4 can of light coconut milk to that and mix it up. next put in your meat or tofu and then your veggies and cook it to your liking. serve on brown rice and there you have it!
